Directions
In a large bowl, combine flour, 1-1/4 cups Cheddar cheese, baking powder, granulated sugar, and salt. Add beer, all at once, and mix until just combined; batter will be lumpy.
Pour batter into prepared pan. Brush with melted butter. Bake 50 minutes. Remove loaf from oven and top with remaining 1/4 cup shredded cheese. Bake an additional 10 minutes or until toothpick inserted near center comes out clean.
Cool 10 minutes on a wire cooling rack, turn out, and remove from loaf pan.
