    1 ½ c. Stemilt cherries, pitted and roughly chopped
    1 ½ c. Hy-Vee vanilla-flavored Greek Yogurt
    2 to 4 Tbsp. Hy-Vee clover honey (more or less, to taste)
    12 oz. Hy-Vee semisweet chocolate chips
    1 tsp. coconut oil, optional

    • Parchment paper
    • Large bowl
    • Microwave-safe bowl
    • Fork

    Directions

    1. Line a rimmed baking sheet with parchment paper and set aside.

    2. In a large bowl, combine the cherries, yogurt, and honey, mixing well. Scoop on to prepared baking sheet in small rounds, roughly ½ cup each, for a total of six. Transfer to a freezer and chill for at least 1 hour, or until frozen solid.

    3. Once the cherries and yogurt have frozen, melt the chocolate chips. Place chocolate and coconut oil in a microwave-safe bowl and heat for 30 second intervals, stirring between each, until chocolate is melted and smooth, about 90 seconds.

    4. Carefully peel frozen yogurt bites off of the parchment paper and quickly dunk in melted chocolate, flipping to ensure the entire surface is covered. Tap off excess chocolate with a fork.

    5. Return yogurt bites to parchment and freeze for another 5 to 10 minutes, or until chocolate is set.
