    2 (6-oz. each) boneless skinless chicken breasts
    2 tsp. Weber zesty lemon seasoning
    1 tbsp. fresh mint, minced
    1 tsp. fresh oregano, minced
    2 tsp. orange zest
    3 clove(s) garlic, minced
    2 tbsp. Gustare Vita extra virgin olive oil
    Hy-Vee Salt
    Hy-Vee ground black pepper
    Creamy Mandarin Dressing
    ½ c. fresh mandarin juice
    2 tsp. Hy-Vee granulated sugar
    1 clove(s) garlic, minced
    1 tbsp. white wine vinegar
    1 pinch(es) Hy-Vee ground cinnamon
    ½ c. Hy-Vee mayonnaise
    ½ tsp. sesame oil
    1 tsp. kosher salt
    Hy-Vee ground black pepper
    2 c. broccoli slaw
    Citrus Salad
    1 grapefruit, peeled and segmented
    1 cara cara orange, peeled and segmented
    1 navel orange, peeled and segmented
    1 tbsp. pickled red onions, optional
    ¼ c. Hy-Vee chopped walnuts, toasted

    Directions

    1. Preheat oven to 350 degrees. Line a baking sheet with foil; set aside.

    2. Make Herb and Citrus Chicken: Pat chicken breasts dry with paper towels and season with lemon seasoning, mint, oregano, orange zest, garlic, salt, and pepper. 

    3. Heat olive oil in a large skillet over medium-high heat. Once oil begins to shimmer, add chicken breasts. Sear for 3 to 5 minutes on each side, or until chicken is golden brown. Place chicken on prepared sheet pan and bake 15 minutes or until chicken is cooked through (165 degrees).

    4. Make Creamy Mandarin Dressing: Add mandarin juice, sugar, garlic, white wine vinegar, cinnamon, mayonnaise, sesame oil, kosher salt, and ground black pepper to a large bowl whisking to combine. Reserve ¼ cup of the dressing for garnish. Add broccoli slaw to dressing and toss to combine; set aside.

    5. Make Citrus Salad: Divided dressed broccoli slaw between four plates. Top each plate with equal amounts grapefruit segments, car cara and navel orange segments, pickled red onions, if desired, and chopped walnuts.

    6. Remove chicken from the oven and allow to rest at least 5 minutes tented with foil. Slice chicken across the grain and top each salad with sliced chicken breasts. If desired, drizzle with reserved Creamy Mandarin Dressing.
