1 (25 oz) pkg frozen Hy-Vee Select cheese ravioli | ||
1 (16 oz) container fresh whole white mushrooms, halved | ||
2 garlic cloves, minced | ||
2 tbsp. Hy-Vee Select olive oil | ||
½ c. artichoke hearts, drained | ||
1 medium red bell pepper, diced | ||
4 oz. crumbled Gorgonzola cheese | ||
3 oz. Hy-Vee cream cheese, diced | ||
Hy-Vee salt and Hy-Vee black pepper to taste |
Directions
- Cook ravioli according to package directions. Drain.
- Meanwhile, in a large skillet, sauté mushrooms and garlic in olive oil over medium-high heat 3 to 4 minutes or until garlic is tender.
- Stir in artichoke hearts and bell pepper. Cook 5 to 6 minutes or until bell pepper is tender.
- Stir mushroom mixture into ravioli along with Gorgonzola and cream cheese.
- Season with salt and pepper.
