1 (25 oz) pkg frozen Hy-Vee Select cheese ravioli
1 (16 oz) container fresh whole white mushrooms, halved
2 garlic cloves, minced
2 tbsp. Hy-Vee Select olive oil
½ c. artichoke hearts, drained
1 medium red bell pepper, diced
4 oz. crumbled Gorgonzola cheese
3 oz. Hy-Vee cream cheese, diced
Hy-Vee salt and Hy-Vee black pepper to taste

Directions

  1. Cook ravioli according to package directions. Drain.
  2. Meanwhile, in a large skillet, sauté mushrooms and garlic in olive oil over medium-high heat 3 to 4 minutes or until garlic is tender.
  3. Stir in artichoke hearts and bell pepper. Cook 5 to 6 minutes or until bell pepper is tender.
  4. Stir mushroom mixture into ravioli along with Gorgonzola and cream cheese.
  5. Season with salt and pepper.
