2 tbsp. fresh lime juice (approximately the juice of 1 lime) | ||
1 tbsp. canola oil | ||
1 tbsp. minced shallot | ||
2 tsp. rice vinegar | ||
1 tsp. honey | ||
cayenne pepper or to taste | ||
4 kiwis, peeled and diced | ||
2 firm, ripe bananas, peeled and cut diagonally into 1/2-inch-thick slices | ||
¼ c. dried Goji berries | ||
2 tbsp. thinly sliced fresh mint | ||
2 tbsp. slivered almonds, toasted (see *Tip) |
Directions
- Whisk lime juice, oil, shallot, vinegar, honey and cayenne in a medium bowl.
- Add kiwis, bananas, Goji berries and mint; toss to coat.
- Serve sprinkled with slivered almonds.
- *Tip: To toast almonds on the stovetop: Toast in a small, dry skillet over medium-low heat, stirring constantly, until fragrant and lightly browned, 3 to 5 minutes.
