    1 c. Hy-Vee extra moist lemon deluxe cake mix, cooked according to package directions and crumbled
    2 c. Row vodka

    1 ½ oz. Lemon Cake-Infused Vodka
    ½ lemon , juiced
    ½ oz. simple syrup
    2 oz. ginger beer

    • Mason jar with a tight fitting lid
    • Muddler or spoon
    • Cocktail shaker
    • Ice
    • Coupe glass

    Directions

    1. Make Lemon Cake-Infused Vodka: Place 1 c. cake crumbs and vodka into a mason jar with a tight fitting lid. Muddle cake into vodka and store in the refrigerator for at least 2 hours.

    2. Make Lemon Cake Lemon Drop: Strain 1-1/2 –oz. Lemon Cake-Infused Vodka into a cocktail shaker filled with ice. Add lemon juice and simple syrup; shake well until chilled and combined.

    3. Strain into a coupe glass and top with ginger beer.
