Directions
- Place scoop of ice cream on the underside of one cookie. Top with other cookie, press together gently and eat.
- *Ice cream sandwiches may be made in advance. Assemble sandwiches, place on a baking sheet and freeze until ready to eat. Allow to thaw briefly before serving.
