2 c. cooked brown rice rotini pasta, measured after cooking | ||
½ c. chopped roasted red peppers | ||
¼ c. quartered Spanish olives | ||
¼ c. shredded Parmesan cheese | ||
1 tbsp. red wine vinegar |
Directions
- Drain artichokes and reserve marinade.
- Toss together artichokes, pasta, peppers, olives and cheese.
- Whisk together artichoke marinade and red wine vinegar. Pour over pasta mixture. Toss well.
