1 tbsp. Hy-Vee Select garlic-flavored olive oil | ||
1 medium onion, chopped | ||
1 green pepper, seeded and chopped | ||
2 (14.5 oz each) cans Hy-Vee diced tomatoes | ||
2 medium zucchini, cut into 1-inch chunks | ||
1 tsp. herbes de Provence | ||
Hy-Vee sea salt and Hy-Vee pepper, to taste | ||
Hot, cooked Hy-Vee whole wheat penne, optional |
Directions
- Heat oil in a large pot over medium heat. Cook onions and green pepper, stirring occasionally, until soft, about 10 minutes.
- Stir in tomatoes, zucchini and herbes de Provence. Season to taste with salt and pepper.
- Cover and simmer until vegetables are very tender, stirring occasionally, about 30 minutes. If desired, season with additional salt and pepper.
- Serve over penne if desired.
