Traditional salmoriglio sauce is a southern Italian condiment featuring olive oil, lemon, garlic and herbs. While typically served as an accompaniment to seafood or meat, it also pairs deliciously well with roasted vegetables.

½ tsp. lemon zest | ||
1 tsp. fresh lemon juice | ||

Directions
Stir together the melted butter, olive oil and brown sugar in a small cup. Drizzle over vegetables in bowl; toss to coat. Spread, in a single layer, in a large rimmed baking pan.
Roast at 400 degrees for 20 to 25 minutes or until vegetables are tender.
Meanwhile, for sauce, combine reserved carrot tops, shallot, olive oil, parsley, lemon zest and juice, and garlic in a medium bowl. Season to taste with salt and pepper.
To serve, arrange roasted vegetables on serving platter. Top with sauce.
