Traditional salmoriglio sauce is a southern Italian condiment featuring olive oil, lemon, garlic and herbs. While typically served as an accompaniment to seafood or meat, it also pairs deliciously well with roasted vegetables.

1 ½ lbs. whole tri-colored carrots with tops, tops removed and reserved; carrots peeled and cut lengthwise in half
12 oz. fresh green beans, trimmed
2 shallots, thinly sliced
½ tsp. kosher salt
¼ tsp. Hy-Vee black pepper
1 tbsp. Hy-Vee salted butter, melted
1 tbsp. Gustare Vita olive oil
1 tsp. packed Hy-Vee light brown sugar
Salmoriglio Sauce
Green tops from the carrots, washed, patted dry and finely chopped
1 shallot, cut lengthwise into very thin strips
½ c. Gustare Vita extra virgin olive oil
1 tsp. chopped Italian parsley
½ tsp. lemon zest
1 tsp. fresh lemon juice
½ tsp. minced fresh garlic
Hy-Vee salt, to taste
Hy-Vee black pepper, to taste

Directions

  1. For roasted vegetables, preheat the oven to 400 degrees. Combine the carrots, green beans, shallots, salt and pepper in a large bowl.

  2. Stir together the melted butter, olive oil and brown sugar in a small cup. Drizzle over vegetables in bowl; toss to coat. Spread, in a single layer, in a large rimmed baking pan.

  3. Roast at 400 degrees for 20 to 25 minutes or until vegetables are tender.

  4. Meanwhile, for sauce, combine reserved carrot tops, shallot, olive oil, parsley, lemon zest and juice, and garlic in a medium bowl. Season to taste with salt and pepper.

  5. To serve, arrange roasted vegetables on serving platter. Top with sauce.
