2 tbsp. olive oil, divided | ||
2 lbs. boneless fresh pork, cut into 1-inch cubes | ||
4 clove(s) garlic, minced | ||
1 (29 oz) can tomatoes, undrained | ||
½ tsp. dried basil | ||
1 tsp. dried oregano | ||
¼ tsp. dried thyme | ||
salt and pepper, to taste | ||
½ c. dry white wine | ||
1 large onion, peeled and sliced | ||
1 medium sweet red bell pepper, seeded and sliced | ||
1 medium green pepper, seeded and sliced |
Directions
- Heat 1 tablespoon oil in a large heavy skillet over medium-high heat.
- Add pork and garlic. Cook and stir to brown pork, about 4 to 5 minutes. Add tomatoes, basil, oregano, thyme, salt, pepper and white wine.
- Reduce heat, cover tightly and simmer until pork is tender, about 12 to 15 minutes.
- Meanwhile, saute onion and peppers in remaining 1 tablespoon oil in large skillet, about 3 minutes.
- Add onion mixture to pork mixture. Blend gently and simmer for 2 to 3 minutes.
