Tuscan Roast Beef Focaccia

4 pieces garlic focaccia or 4 focaccia rolls | ||
¼ c. light mayonnaise | ||
2 tsp. chopped fresh rosemary or 1 tsp crushed dried rosemary | ||
8 oz. sliced Di Lusso deli roast beef | ||
⅓ c. Gorgonzola cheese crumbles | ||
½ small red onion, thinly sliced, separated into rings | ||
2 c. arugula leaves |
Directions
- Using a bread knife, cut the focaccia in half lengthwise. Place cut side up on a work surface. In a small bowl combine mayonnaise, rosemary, and salt and pepper to taste. Spread mayonnaise mixture evenly on cut sides of focaccia.
- Place one-fourth of the roast beef on each bottom half of focaccia. Sprinkle evenly with Gorgonzola and top with onion and arugula. Cover with tops of focaccia, pressing to close. Serve at room temperature, or heat on a sandwich griddle or in the oven and serve warm.
