Lean cuts of pork, such as pork chops, are good for brining. While soaking in a salt-water solution, it draws in moisture, making it tender and juicy when cooked. Add herbs, aromatics, and even citrus to the brine to infuse even more flavor.
Directions
Place chops in a 13x9x2-inch glass dish; pour brine over top. Add lemon slices, garlic, herbs, and peppercorns.
Cover and refrigerate chops 4 hours before cooking
