Things To Grab
- 3-in. round cookie cutter
- Medium nonstick skillet
- Large nonstick skillet
- Hy-Vee canola cooking oil spray
Directions
Heat a medium nonstick skillet over medium-high heat. Add ground beef, fajita seasoning, water and pepper. Cook for 8 to 10 minutes or until browned (165 degrees), stirring occasionally to break beef into large crumbles. Remove from heat; cover to keep warm.
Spray a large nonstick skillet with cooking spray; heat skillet over low heat. Place 1 flour tortilla in skillet. Spoon about 1/2 cup beef mixture on center of tortilla. Top with 1-1/2 Tbsp. cheese, 1 tostada, 1 Tbsp. sour cream, 1/2 cup lettuce and 1/4 cup tomato. Top with 1 (3-in.) tortilla round. Fold the tortilla edges up and over the filling and toward the center to completely enclose filling, making 1-1/2-in.-wide pleats as necessary.
Carefully turn the filled tortilla bundle over in the skillet, with pleated side down. Cook over medium heat for 2 to 3 minutes or until lightly browned, turning halfway through and gently pressing down during cooking to seal. Remove from skillet.
Slightly cool skillet and repeat assembling and cooking 3 more bundles with the remaining flour tortillas, beef mixture, cheese, tostadas, sour cream, lettuce and tomato. Cut in half before serving. Serve with salsa con queso for dipping, if desired.
