Combine water and lavender in a medium saucepan. Simmer over medium-low heat for 5 minutes. Remove from heat and whisk in honey. Completely cool. Pour syrup through a fine mesh sieve over a glass jar. Discard remaining lavender. Store tightly covered in the refrigerator for up to 2 weeks.

Directions
Combine grapefruit juice, lemon juice, lavender syrup and gin into a cocktail shaker. Add ice to the cocktail shaker, cover and shake until well chilled.
Strain drink mixture into an ice-filled 12-oz. fire-long drink glass or Collins glass. Top with sparkling water. Garnish with a wedge of grapefruit and fresh mint, if desired.
