    1 c. water
    2 tbsp. dried lavender
    2 c. Hy-Vee clover honey
    Cocktail
    1 oz. fresh grapefruit juice
    ½ oz. fresh lemon juice
    1 oz. honey lavender syrup
    1 ½ oz. gin
    Unflavored sparkling water, for serving
    Grapefruit wedge, for garnish
    Fresh mint sprig, for garnish

    • Wooden or silicone spoon
    • Whisk
    • Fine-mesh sieve
    • Glass jar with cover
    • Cocktail shaker
    • 12-oz. fire-long drink glass or Collins glass

    Directions

    1. Combine water and lavender in a medium saucepan. Simmer over medium-low heat for 5 minutes. Remove from heat and whisk in honey. Completely cool. Pour syrup through a fine mesh sieve over a glass jar. Discard remaining lavender. Store tightly covered in the refrigerator for up to 2 weeks.

    2. Combine grapefruit juice, lemon juice, lavender syrup and gin into a cocktail shaker. Add ice to the cocktail shaker, cover and shake until well chilled.

    3. Strain drink mixture into an ice-filled 12-oz. fire-long drink glass or Collins glass. Top with sparkling water. Garnish with a wedge of grapefruit and fresh mint, if desired.
