Jicama and Orange Salad

1 small jicama, peeled and cut into 1/8-by-1-1/2-inch sticks | ||
2 carrots, peeled and coarsely grated | ||
2 small oranges, peeled and sliced | ||
½ tbsp. olive oil | ||
2 tbsp. orange juice | ||
1 ½ tbsp. honey | ||
1 ½ tsp. lime juice | ||
Salt, to taste |
Directions
- In medium bowl, mix jicama, carrots and oranges.
- In small bowl, combine oil, orange juice, honey, lime juice and salt, to taste. Mix well.
- Pour dressing over jicama. Chill and serve.
