1 ½ lbs. skinless, boneless chicken breasts, cut into 1-1/2-inch cubes
2 tbsp. Hy-Vee Select olive oil
3 tbsp. chopped fresh tarragon leaves
1 red onion, cut into 1-1/2 inch cubes
3 c. cubed cantaloupe
2 limes, each cut into 6 wedges
salt and pepper, to taste

Directions

  1. In a medium bowl, toss chicken cubes with oil and tarragon until evenly coated.
  2. Thread eight 12-inch skewers alternately with chicken, onion, cantaloupe and lime wedges.
  3. Over medium heat, place chicken skewers on lightly oiled rack of grill.
  4. Grill, turning occasionally, 20 minutes or until chicken reaches 165 degrees.
