1 ½ lbs. skinless, boneless chicken breasts, cut into 1-1/2-inch cubes | ||
2 tbsp. Hy-Vee Select olive oil | ||
3 tbsp. chopped fresh tarragon leaves | ||
1 red onion, cut into 1-1/2 inch cubes | ||
3 c. cubed cantaloupe | ||
2 limes, each cut into 6 wedges | ||
salt and pepper, to taste |
Directions
- In a medium bowl, toss chicken cubes with oil and tarragon until evenly coated.
- Thread eight 12-inch skewers alternately with chicken, onion, cantaloupe and lime wedges.
- Over medium heat, place chicken skewers on lightly oiled rack of grill.
- Grill, turning occasionally, 20 minutes or until chicken reaches 165 degrees.
