My Mother's State Fair Championship Apple Pie

4 c. Granny Smith apples, sliced | ||

2 tbsp. cornstarch | ||
4 ¼ tsp. salt, divided | ||
2 tbsp. butter | ||

2 c. Gold Medal flour | ||
¾ c. vegetable shortening | ||
9 tbsp. cold water | ||

Directions
- Preheat oven to 350 degrees.
- Combine apples, sugar, cornstarch, 4 teaspoons salt, butter and cinnamon. Set aside.
- Combine flour, 1/4 teaspoon salt and shortening. Blend together. Add water. Divide dough in half. Roll out on a floured board. Fit half of dough into a 9-inch pie pan.
- Add apple filling. Cover with second half of rolled-out dough. Flute edges and make vent holes in top of crust. Sprinkle lightly with sugar on top and a touch of cinnamon.
- Bake for 1 hour.
