Directions
Pour ¼ cup olive oil into a 13x9-in. baking dish. Tilt the dish to evenly coat bottom of the dish with the oil. Sprinkle Parmesan cheese evenly on top; do not stir.
Place the potatoes, cut sides down, on the Parmesan cheese; firmly press the potatoes into the oil mixture. Drizzle with remaining ¼ cup olive oil. Sprinkle potatoes with salt, if desired.
Roast potatoes, uncovered, for 35 to 40 minute or until the potatoes are fork-tender and the cheese is dark golden brown. Remove baking dish from the oven; let potatoes stand in baking dish for 5 minutes.
Carefully separate the potatoes with a metal spatula or fork and transfer to a serving platter. Serve with sour cream or desired sour cream dip.
