A Special "CBS Original Blue Bloods" and Wahlburgers Family Dinner Recipe Series

While classic pesto sauce is made with fresh basil, other varieties can be made with other herbs and greens. This version, made with arugula and parsley, is slightly peppery which compliments the sweet carrots and beans.

2 c. lightly packed baby arugula
1 c. lightly packed fresh parsley leaves
½ c. roasted and salted shelled pistachios, plus additional for garnish
¾ c. Gustare Vita extra virgin olive oil, divided
4 clove(s) garlic, peeled
Hy-Vee salt, to taste
¾ c. grated Parmigiano Reggiano cheese chunk, plus additional for garnish
Roasted Vegetables
1 ½ lbs. baby carrots, peeled and tops removed
12 oz. fresh green beans, trimmed
2 medium shallots, thinly sliced
½ tsp. kosher salt
¼ tsp. Hy-Vee black pepper
1 tbsp. Gustare Vita olive oil
1 tbsp. Hy-Vee salted butter, melted
Fresh lemon juice, for serving

Directions

  1. For pesto, place arugula, parsley, pistachios, ½ cup olive oil, garlic cloves and ¼ tsp. salt in a blender or food processor. Cover and pulse until coarsely chop.

  2. Add ¾ cup cheese. Cover; with motor running, slowly pour in remaining ¼ cup olive oil in a steady stream. Process until finely chopped. Season to taste with additional salt, if desired. Transfer to a small bowl. Cover and refrigerate.

  3. For roasted vegetables, preheat the oven to 400 degrees. Place carrots, green beans, shallots, salt and pepper in a large bowl. Drizzle with olive oil and butter; toss to coat. Spread, in a single layer, in a rimmed baking pan.

  4. Roast at 400 degrees for 20 to 25 minutes or until vegetables are tender. Transfer vegetables to serving bowl. Top with desired amount of prepared pesto; toss to coat. Garnish with additional pistachios and cheese, if desired. Drizzle with lemon juice, if desired.
