    2 tbsp. Hy-Vee Dijon mustard
    1 tbsp. Hy-Vee Select olive oil
    1 tbsp. chopped fresh rosemary
    ⅛ tsp. black pepper
    8 (4 to 5 ounces each) lamb loin chops
    Fresh rosemary sprigs, optional

    Directions

    1. Preheat broiler. Coat broiler pan with nonstick cooking spray, and add 1/2-inch water to pan; set aside.
    2. Combine mustard, oil, rosemary and pepper in a small bowl. Brush mustard mixture on both sides of chops. Place chops on unheated broiler pan.
    3. Broil chops 4 inches from heat 7 to 11 minutes for medium, or to desired doneness, turning once. Top with rosemary sprigs, if desired, and serve immediately.
