Scalloped potatoes can be a family-friendly meal, just add ham.

½ c. yellow onion, chopped | ||

4 tbsp. Hy-Vee unsalted butter | ||
4 tbsp. Hy-Vee all-purpose flour | ||

Hy-Vee ground black pepper, to taste | ||
2 ½ c. Hy-Vee skim milk | ||
2 lbs. potatoes, peeled, about 6 medium | ||
1 lbs. fully cooked ham, cubed |

Directions
- Preheat oven to 350 degrees.
- For sauce, sauté onion and garlic in butter in a small saucepan over medium heat until tender. Whisk in flour, salt and pepper. Add milk and cook and stir until thickened and bubbly.
Thinly slice potatoes. Place half the potatoes in a lightly greased 9x13-inch baking dish. Top with half the cubed ham and sauce. Repeat with potato, ham and sauce layers.
- Bake, covered, for 40 minutes. Uncover and continue to bake 20 to 25 minutes or until potatoes are tender and golden.
