Spring Fruit Salad with Pound Cake Croutons

2 c. fresh pineapple chunks | ||
2 c. cantaloupe chunks | ||
¼ c. Hy-Vee orange juice concentrate | ||
2 tbsp. Hy-Vee honey | ||
2 tbsp. fresh basil leaves, chopped | ||
½ (12 oz) pound cake, cubed |
Directions
- Toss grapes, blueberries, pineapple and cantaloupe together.
- In a small bowl, stir together juice concentrate, honey and basil. Add to fruit mixture; toss gently to coat.
- Meanwhile, place pound cake cubes on baking sheet and bake at 350 degrees for 12 minutes, stirring twice.
- Top fruit mixture with pound cake cubes.
