4 boneless, skinless chicken breasts, cut into 1-1/2 inch cubes | ||
1 tbsp. Jamaican jerk seasoning | ||
2 tbsp. fresh lime juice | ||
½ tsp. tsp kosher salt | ||
8 Hy-Vee bamboo skewers, soaked in water at least 30 minutes | ||
¼ of medium Kandy cantaloupe, cut into 2-inch cubes | ||
¼ of medium honeydew, cut into 2-inch cubes | ||
½ of a fresh Del Monte Gold pineapple, cored and cut into 2-inch cubes | ||
1 tbsp. Hy-Vee honey |
Directions
- Combine chicken, Jamaican Jerk seasoning, lime juice and salt in a large resealable plastic bag. Refrigerate at least 30 minutes to marinate. Discard marinade.
- On wooden skewers, alternate chicken, cantaloupe, honeydew and pineapple.
- Grill directly over medium heat 10 to 15 minutes, turning every 2 to 3 minutes or until chicken is cooked through. Remove from grill. Drizzle with honey.
