    1 tsp. vegetable oil
    4 boneless pork loin chops
    1 ½ c. chunky salsa
    1 (4 oz) can diced green chilies
    ½ tsp. ground cumin
    ¼ c. grated cheddar cheese

    Directions

    1. Heat oil in a nonstick pan over medium-heat. Brown chops on one side, about 2 minutes. Turn chops. Stir together salsa, chilies and cumin and add to skillet.
    2. Lower heat, cover and barely simmer for 6 minutes.
    3. Uncover. Top each chop with 1 tablespoon cheese.
    4. Cover and simmer an additional 1 to 2 minutes, until cheese melts. Serve immediately.
