    Ideal for celebrations and perfect for picnics, homemade chicken salad is a quick-to-fix meal that provides protein, crunch and creamy goodness. Prepare this recipe using either home-cooked, leftover chicken or rotisserie chicken from Hy-Vee.

    ¾ c. Hy-Vee mayonnaise
    ¼ c. Hy-Vee ranch salad dressing
    ¼ c. chopped Italian parsley
    2 tbsp. finely chopped yellow onion
    2 ¼ c. chopped cooked chicken
    ½ c. diced unpeeled Granny Smith apple
    ¼ c. chopped celery
    Hy-Vee salt and Hy-Vee black pepper, to taste
    8 slice(s) Hy-Vee Bakery bread, lightly toasted; or 4 Hy-Vee Bakery buns, split
    4 large lettuce leaves
    4 crisp-cooked Hy-Vee sweet smoked bacon
    Tomato slices, optional

    Directions

    1. Stir together mayonnaise, ranch dressing, parsley and onion in a medium bowl.

    2. Add chicken, apple and celery; stir until combined. Season to taste with salt and pepper. Cover and refrigerate for 30 minutes or up to 2 days.

    3. To serve, line 4 slices of toasted bread or the bun bottoms with lettuce. Top with bacon, chicken mixture, and if desired, tomato slices. Top with remaining toasted bread slices or bun tops. Serve immediately.
