1 medium green pepper, seeded, chopped | ||
1 (5.7 oz) pkg Lipton smoked chipotle rice | ||
1 ¾ c. water | ||
8 medium tomatoes | ||
1 tsp. chipotle seasoning | ||
Hy-Vee salt and Hy-Vee pepper | ||
½ c. Hy-Vee shredded taco cheese |
Directions
- Preheat oven to 350 degrees. In a large skillet, combine ground beef, onion, garlic and green pepper. Cook over medium heat until beef is no longer pink.
- Stir in rice and water. Bring to a boil. Cover. Reduce heat to low. Simmer 7 minutes.
- Meanwhile, slice off stem ends of tomatoes. Gently scoop out pulp. Mash and reserve 1/3 cup pulp; discard remaining pulp. Place tomatoes in a greased 11-by-7-inch baking dish.
- When rice is cooked, stir in tomato pulp, seasoning, salt, pepper and cheese. Spoon an equal amount of rice mixture into each tomato.
- Bake tomatoes uncovered 20 to 25 minutes or until heated through.
