4 cloves garlic, minced | ||
2 tsp. Hy-Vee vinegar | ||
1 tsp. Hy-Vee Dijon mustard | ||
½ c. Hy-Vee Select olive oil | ||
3 tbsp. minced fresh tarragon | ||
½ c. chopped chives | ||
⅓ c. chopped parsley | ||
2 tsp. freshly ground Hy-Vee black pepper | ||
2 tsp. Hy-Vee salt |
Directions
- Microwave potatoes according to package directions.
- Meanwhile, lightly sauté garlic in a small non-stick skillet over medium heat.
- Whisk together vinegar, mustard and oil in a medium bowl until thoroughly blended. Add herbs, garlic, salt and pepper.
- Gently toss cooked potatoes in dressing. Serve warm or cold.
