1 (1-1/2 pound) bag Hy-Vee Smart Bite Indigo Blues Potatoes | ||
2 tbsp. Hy-Vee mustard | ||
2 tbsp. Hy-Vee vinegar | ||
½ c. Hy-Vee Select olive oil | ||
½ c. Hy-Vee finely shredded Parmesan cheese | ||
Chives, sliced | ||
1 small red onion, diced | ||
Hy-Vee salt and Hy-Vee pepper, to taste |
Directions
- Microwave potatoes according to package directions.
- Meanwhile, mix mustard and vinegar together in a small bowl. Gradually pour in olive oil, whisking until thoroughly blended. Stir in parmesan cheese, chives and red onion.
- Gently toss cooked potatoes in dressing to coat. Season to taste with salt and pepper. Serve hot, warm or cold.
