2 lbs. medium Yukon gold potatoes, scrubbed and halved
5 tbsp. Gustare Vita extra virgin olive oil, divided
1 tsp. kosher salt
½ tsp. coarsely ground Hy-Vee black pepper
1 whole bulb fresh garlic, cut horizontally in half
1 tbsp. Hy-Vee salted butter, melted
1 tsp. chopped fresh thyme
1 tsp. chopped Italian parsley
½ tsp. chopped fresh rosemary

Directions

  1. Preheat the oven to 400 degrees. Grease a rimmed baking pan with 3 Tbsp. olive oil.

  2. Place halved potatoes in a large bowl. Add remaining 2 tbsp. olive oil, salt and pepper; toss to coat.

  3. Place potatoes and garlic halves, cut sides down, in prepared baking pan. Roast for 25 to 30 minutes or until fork-tender.

  4. Carefully squeeze roasted garlic halve to pop out cloves in a small cup; mash with a fork.

  5. Stir together butter, thyme, parsley and rosemary in a serving bowl. Add roasted potatoes; toss to coat. Serve potatoes with roasted garlic.
