    Things To Grab

    • 2 small bowls
    • Whisk
    • 2 medium bowls
    • Rubber spatula
    • Spoon
    • 2 baking sheets or 12-inch pizza pans

    Directions

    1. For crust, whisk together warm water and sugar in a small bowl. Whisk in yeast until dissolved. Let stand until bubbles form on surface.

    2. Stir together 1½ cups flour and salt in a medium bowl. Make a well in center; add yeast mixture and 3 Tbsp. olive oil. Stir with a wooden spoon until smooth. Stir in enough remaining flour to form a soft dough.

    3. Turn out dough onto a floured surface. Knead dough for 6 to 8 minutes or until smooth and elastic, adding additional flour as needed.

    4. Lightly grease a medium bowl with additional olive oil. Place dough in bowl; turn once to grease top. Cover and let rise in a warm place for 30 to 45 minutes or until doubled in size. Use immediately or refrigerate up to 48 hours. If refrigerated, allow dough to stand at room temperate for 30 minutes before using.

    5. For pizza, place oven racks in the upper and lower third of the oven; preheat the oven to 425 degrees. Grease 2 large baking sheets or 2 (12-in.-round) pizza pans with additional olive oil. Divide dough in half. Place each on a baking sheet or pizza pan; stretch and pat into a 10- to 12-in. round. Partially bake for 7 to 8 minutes or until crusts just begin to brown, switching baking sheets on oven racks halfway through.

    6. Meanwhile, stir together tomato sauce, oregano and basil in a small bowl.

    7. Remove crusts from oven; spread with sauce. Add toppings. Sprinkle each pizza with 1 cup pizza cheese and ½ cup mozzarella & provolone cheese. Bake for 8 to 10 minutes more or until cheese is melted and crusts are golden brown, switching baking sheets on oven racks halfway through. Garnish with basil, if desired. Serve with crushed red pepper.
