3 c. sliced fresh mushrooms | ||
1 shallot, diced | ||
½ c. chopped celery | ||
2 clove(s) garlic, minced | ||
1 c. Quick Quaker barley | ||
1 (14.5 oz) can Hy-Vee beef broth | ||
1 (15.5 oz) can cannellini white kidney beans, drained | ||
½ lbs. Graziano's sausage or any spicy sausage, cooked | ||
Hy-Vee salt and Hy-Vee pepper, to taste |
Directions
- Heat oil in a large saucepan over medium heat. Stir in mushrooms, shallot, celery and garlic. Sauté until tender.
- Stir in barley and beef broth. Bring to a boil. Cover. Simmer 10 minutes.
- Stir in beans and sausage. Season with salt and pepper. Cook an additional 5 minutes.
