    1 tsp. Hy-Vee Select olive oil
    3 c. sliced fresh mushrooms
    1 shallot, diced
    ½ c. chopped celery
    2 clove(s) garlic, minced
    1 c. Quick Quaker barley
    1 (14.5 oz) can Hy-Vee beef broth
    1 (15.5 oz) can cannellini white kidney beans, drained
    ½ lbs. Graziano's sausage or any spicy sausage, cooked
    Hy-Vee salt and Hy-Vee pepper, to taste

    Directions

    1. Heat oil in a large saucepan over medium heat. Stir in mushrooms, shallot, celery and garlic. Sauté until tender.
    2. Stir in barley and beef broth. Bring to a boil. Cover. Simmer 10 minutes.
    3. Stir in beans and sausage. Season with salt and pepper. Cook an additional 5 minutes.
