Stir in water, tomato paste and sloppy joe mix; simmer for 4 to 5 minutes. Remove skillet from heat. Set aside 2 tablespoons chopped pickles for topping; stir remaining chopped pickles into sloppy joe mixture.
Arrange bun halves, cut sides up, in a circular pattern on top of sloppy joe mixture. Bake for 6 to 8 minutes, or until buns begin to crisp. Top buns with cheese and reserved chopped pickles; bake for 2 to 3 minutes more or until cheese is melted. Let stand for 5 minutes before serving.
